Description

Bell Pepper Nachos offer a healthy and colorful twist on traditional nachos by using crispy bell pepper chips as a fresh and crunchy base. Topped with seasoned ground beef or turkey, black beans, corn, jalapeños, and melted reduced-fat cheese, this recipe delivers a flavorful and satisfying snack or appetizer perfect for gatherings or a quick weeknight meal.

Ingredients

Scale

Bell Pepper Chips

  • 6 large bell peppers

Meat Topping

  • 1 pound ground beef or ground turkey
  • 2 tablespoons taco seasoning
  • ¾ cup canned black beans, rinsed and drained
  • ¾ cup sweet yellow corn, thawed
  • 1 jalapeño, sliced (optional)
  • ½ to 1 cup reduced-fat shredded Mexican cheese blend

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and prepare a baking sheet by lightly coating it with nonstick oil or lining it with parchment paper for easy cleanup.
  2. Prepare Bell Peppers: Core the bell peppers to remove seeds and membranes, then slice them into chip-sized pieces. Arrange these pepper chips in a single layer on the prepared baking sheet.
  3. Cook Meat Topping: Heat a skillet over medium heat and add the ground beef or ground turkey. Cook and crumble the meat until browned and fully cooked. Drain any excess fat if necessary. Stir in the taco seasoning along with a splash of water (per seasoning packet instructions), then add black beans, corn, and sliced jalapeño. Mix well and cook for an additional 2-3 minutes to combine flavors and heat through.
  4. Assemble Nachos: Spoon the seasoned meat mixture evenly over the bell pepper chips on the baking sheet. Sprinkle the shredded reduced-fat Mexican cheese blend over the top of the meat and peppers.
  5. Bake: Place the baking sheet in the preheated oven and bake for about 8-10 minutes, or until the cheese has melted and is bubbly.
  6. Serve: Remove from the oven and serve the bell pepper nachos warm. Add additional favorite toppings such as sour cream, guacamole, or salsa if desired.

Notes

  • For a vegetarian version, substitute the ground beef with plant-based crumbles or extra beans.
  • Adjust the jalapeño quantity or omit it entirely if you prefer less heat.
  • Use any color bell peppers to add visual appeal and sweetness.
  • Serve immediately for the best crunch and melted cheese texture.
  • Leftover nachos can be refrigerated and reheated but may lose some crispness.
