Description

This fresh and vibrant Caprese Stuffed Avocado recipe combines ripe avocados with juicy tomatoes, creamy mozzarella, and fragrant basil, all drizzled with olive oil and balsamic glaze. It’s a quick, no-cook dish perfect for a healthy snack or light meal, bursting with Mediterranean flavors and creamy textures.

Ingredients

Scale

Avocado Stuffing

  • 2 large ripe avocados (halved and pitted)
  • 1/2 cup fresh mozzarella balls (bocconcini or ciliegine, cut in half)
  • 1/2 cup cherry or grape tomatoes (halved)
  • 2 tbsp fresh basil leaves (chopped)

Dressing & Seasoning

  • 1 tbsp olive oil
  • 1 tbsp balsamic glaze (store-bought or homemade)
  • Salt and black pepper (to taste)

Optional Toppings

  • Red chili flakes
  • Garlic powder
  • Toasted pine nuts

Instructions

  1. Prepare the Avocados: Carefully halve and pit the large ripe avocados. Use a spoon to slightly scoop out some flesh from the center of each half to create a larger cavity for the filling, placing the scooped avocado flesh into a bowl.
  2. Make the Caprese Filling: In a bowl, combine the halved fresh mozzarella balls, halved cherry or grape tomatoes, and chopped fresh basil leaves. Add the scooped avocado flesh and gently mix everything together.
  3. Season the Filling: Drizzle the olive oil over the mixture, then season with salt and black pepper to taste. Mix gently to ensure the ingredients are evenly coated.
  4. Stuff the Avocado Halves: Generously spoon the Caprese filling back into the avocado halves, making sure each half is filled well and visually appealing.
  5. Dress and Garnish: Drizzle the balsamic glaze over each stuffed avocado half. Optionally, sprinkle red chili flakes, garlic powder, or toasted pine nuts on top for extra flavor and texture.
  6. Serve Immediately: Serve the Caprese stuffed avocados fresh to enjoy the creamy and tangy flavors at their best.

Notes

  • Choose ripe but firm avocados to hold the filling well.
  • If balsamic glaze is unavailable, reduce balsamic vinegar by simmering until syrupy as a homemade alternative.
  • Customize toppings to add heat (chili flakes) or crunch (pine nuts).
  • This recipe is best enjoyed immediately to prevent avocado browning; if needed, sprinkle avocado halves with lemon juice to help maintain color.
