Description

Delicious and comforting Chicken Alfredo Lasagna Rolls combine tender cooked chicken, creamy ricotta and mozzarella cheeses, and rich Alfredo sauce all rolled inside cooked lasagna noodles, baked to bubbly perfection. This easy-to-make dish is perfect for a family dinner or special occasion meal.

Ingredients

Scale

Lasagna Rolls

  • 12 lasagna noodles
  • 2 cups cooked chicken, shredded
  • 2 cups ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 1 tsp garlic powder
  • 1/2 tsp dried Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Cook Noodles: Cook the lasagna noodles according to the package instructions until al dente. Drain the noodles and lay them flat on a surface to cool slightly and prevent sticking.
  2. Prepare Filling: In a large mixing bowl, combine shredded cooked chicken, ricotta cheese, 1 cup of shredded mozzarella, grated Parmesan, garlic powder, dried Italian seasoning, salt, and pepper. Mix thoroughly until the ingredients are evenly incorporated.
  3. Assemble Rolls: Preheat the oven to 375°F (190°C). Spread a thin layer of Alfredo sauce on the bottom of a baking dish to prevent sticking. Place one cooked lasagna noodle on a flat surface, spread approximately 2 to 3 tablespoons of the chicken-cheese mixture evenly along the noodle, then tightly roll it up. Place the rolled noodle seam-side down in the prepared baking dish. Repeat these steps for all noodles and filling.
  4. Add Sauce and Cheese: Pour the remaining Alfredo sauce evenly over the assembled lasagna rolls in the dish. Sprinkle the remaining 1/2 cup of shredded mozzarella evenly on top. Cover the baking dish with aluminum foil to keep moisture in during baking.
  5. Bake: Bake the covered lasagna rolls in the preheated oven for 20 minutes. Remove the foil and continue baking for an additional 10 minutes until the cheese is golden brown and bubbly.
  6. Garnish and Serve: Remove from oven and let sit for a few minutes. Garnish with freshly chopped parsley if desired. Serve the lasagna rolls hot and enjoy!

Notes

  • For easier rolling, ensure your lasagna noodles are not overcooked and have cooled slightly.
  • You can make Alfredo sauce from scratch for a fresher taste or use a good-quality store-bought sauce.
  • Leftovers can be stored covered in the refrigerator for up to 3 days and reheated in the oven.
  • Feel free to add sautéed vegetables like spinach or mushrooms to the filling for added nutrition and flavor.
  • If you prefer a spicier dish, add a pinch of red pepper flakes to the cheese mixture.
