Description

Chicken Alfredo Roll-Ups are a comforting and creamy baked pasta dish featuring tender shredded chicken, a rich homemade Alfredo sauce, and cheesy lasagna noodles rolled and baked to perfection. This recipe combines the flavors of garlic, Italian seasoning, and spinach to create a deliciously satisfying meal ideal for family dinners or special occasions.

Ingredients

Scale

For the Chicken Alfredo Roll-Ups:

  • 4 large boneless, skinless chicken breasts, cooked and shredded (or rotisserie chicken)
  • 8 cooked lasagna noodles (al dente)
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1 cup spinach (optional for added greens)

For the Alfredo Sauce:

  • 1/2 cup unsalted butter
  • 2 cups heavy cream
  • 2 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Prepare the Alfredo Sauce: In a medium saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant. Pour in the heavy cream and bring to a simmer, stirring frequently to prevent burning. Allow the cream to thicken for 3-4 minutes. Stir in the Parmesan cheese, salt, and pepper, continuing to simmer until the sauce is smooth and creamy. Remove from heat and set aside.
  2. Prepare the Chicken Filling: In a large mixing bowl, combine the shredded chicken, mozzarella cheese, Parmesan cheese, garlic powder, Italian seasoning, and spinach (if using). Mix thoroughly until all ingredients are evenly incorporated to create a flavorful filling.
  3. Assemble the Roll-Ups: Preheat your oven to 375°F (190°C). Spread a thin layer of Alfredo sauce on the bottom of a 9×13-inch baking dish to prevent sticking. Lay each cooked lasagna noodle flat on a clean surface, spoon the chicken mixture along the center of each noodle, then carefully roll up the noodles and place them seam-side down in the prepared baking dish.
  4. Top and Bake: Pour the remaining Alfredo sauce evenly over the top of the assembled roll-ups. Sprinkle any leftover mozzarella and Parmesan cheeses on top for a golden crust. Cover the dish with foil and bake for 20 minutes, then remove the foil and bake for an additional 10 to 15 minutes until the cheese is melted, bubbly, and slightly golden.
  5. Serve: Allow the dish to cool for a few minutes to set the sauce before serving. Optionally, garnish with fresh parsley for added color and freshness. Serve hot as a delicious and hearty main course.

Notes

  • Use rotisserie chicken for a faster prep time and added flavor.
  • Crock noodles al dente to avoid mushy roll-ups after baking.
  • Spinach is optional but adds a nutritious boost and color contrast.
  • Covering with foil prevents the top from drying out while baking.
  • Let the dish rest after baking so the sauce thickens slightly for easier serving.
