Instructions

  1. Heat the oil. Heat the canola oil in a large pan or wok over medium-high heat to prepare for cooking the chicken.
  2. Cook the chicken. Add the chicken strips to the pan and cook until browned on the outside and fully cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside to keep warm.
  3. Sauté aromatics. In the same pan, add the minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant, releasing their full aroma.
  4. Cook the vegetables. Add the sliced mushrooms, chopped onion, shredded Napa cabbage, and matchstick carrots to the pan. Stir-fry for 3-4 minutes until the vegetables are tender but maintain a crisp texture.
  5. Prepare the sauce. In a small bowl, whisk together the low sodium chicken broth, cornstarch, sesame oil, soy sauce, and light brown sugar until well combined and smooth.
  6. Combine chicken and pasta. Return the cooked chicken to the pan with the vegetables, then add the cooked pasta to the mixture.
