Tomato Sauce

  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup fresh basil leaves, chopped

  • 1/4 cup grated Parmesan cheese (optional)


Instructions

  1. Heat the oil: Heat olive oil in a large skillet over medium heat to prepare for cooking the chicken.
  2. Season the chicken: Season both sides of the chicken breasts generously with salt and pepper to enhance flavor.
  3. Cook the chicken: Place the chicken breasts in the hot skillet and cook for 5-7 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
  4. Sauté the onion: In the same skillet, add the finely chopped onion and sauté over medium heat until it becomes translucent, about 3 minutes.
  5. Add garlic: Add minced garlic to the skillet and cook for 1 minute more until fragrant, being careful not to burn it.
  6. Prepare the tomato sauce: Stir in the crushed tomatoes, halved cherry tomatoes, dried oregano, red pepper flakes if using, and season with salt and pepper. Let the sauce simmer gently for 10 minutes, stirring occasionally to combine the flavors.
  7. Combine chicken and sauce: Return the cooked chicken breasts to the skillet, spoon some of the tomato sauce over them, cover the skillet, and simmer for an additional 5 minutes to meld the flavors.
