  • 2 1/2 cups cooked chicken, shredded or diced

  • 1/4 cup light mayonnaise

  • 1/8 cup non-fat plain Greek yogurt (extra)
  • 1 teaspoon white wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey
  • 1/4 teaspoon salt
  • Pepper, to taste

Optional

  • 1/4 cup slivered almonds or walnuts


Instructions

  1. Toast Nuts (Optional): If using nuts, toast them in a small skillet over medium heat for about 3 minutes until fragrant. Remove from heat and let them cool completely before adding to the salad.
  2. Make the Dressing: In a large bowl, combine Greek yogurt, light mayonnaise, white wine vinegar, Dijon mustard, honey, and 1/4 teaspoon salt. Whisk until fully combined and smooth. Taste and adjust seasoning with additional salt and pepper as needed.
  3. Combine Ingredients: Add the shredded or diced chicken, finely chopped red onion, diced celery, halved grapes, chopped tarragon, and cooled toasted nuts (if using) to the dressing. Toss gently to combine all ingredients evenly. Season with additional salt and pepper to taste.
