Description

This Chili Cheese Dog Casserole is a hearty and comforting dish perfect for feeding a crowd. It layers spicy chili with beans and tangy Rotel tomatoes, topped with cheddar cheese and crescent roll-wrapped hot dogs baked to golden perfection. Easy to prepare, this casserole makes a perfect family dinner that’s both satisfying and flavorful.

Ingredients

Scale

Chili Base

  • 2 (15-ounce) cans chili with beans
  • 1 (10-ounce) can Rotel diced tomatoes and green chilies, undrained
  • 1 ½ cups shredded cheddar cheese, divided

Hot Dogs

  • 6 beef smoked sausages (or your favorite type of hot dog)
  • 1 (8-ounce) can refrigerated crescent roll dough

Garnish

  • Minced fresh parsley (optional)

Instructions

  1. Preheat and Combine: Preheat your oven to 375°F (190°C). In a 9×13 inch baking dish, thoroughly combine the chili with beans and the undrained Rotel diced tomatoes with green chilies. Stir well to combine all the flavors evenly. Then sprinkle ¾ cup of shredded cheddar cheese over this chili mixture for a cheesy base layer.
  2. Wrap Hot Dogs: Carefully separate the crescent roll dough into 6 individual triangles. Take each triangle and sprinkle it with the remaining ¾ cup of shredded cheddar cheese. Wrap each cheese-sprinkled dough triangle around one beef smoked sausage, leaving the ends of the hot dogs exposed to peek through the dough.
  3. Bake: Arrange the wrapped hot dogs evenly on top of the chili and cheese mixture in the baking dish. Place the dish in the preheated oven and bake for 40-45 minutes, or until the crescent rolls turn golden brown and are cooked all the way through, creating a delicious crust.
  4. Serve: Once baked, remove the casserole from the oven and garnish with minced fresh parsley if desired. Serve the casserole warm for a comforting and satisfying meal that combines cheesy, meaty, and hearty chili flavors.

Notes

  • You can substitute beef smoked sausages with your favorite type of hot dog or sausage.
  • For extra spice, add jalapeños to the chili mixture before baking.
  • Use sharp cheddar for a stronger cheese flavor or mild cheddar if you prefer a subtler taste.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven for best results.
  • Adding a side salad or steamed vegetables can balance this rich casserole meal.
