Instructions
- Prepare the vegetables and apples: Chop the onion and slice the celery into thin pieces. Core and chop the apples into medium-sized chunks to combine later into the stuffing.
- Sauté the aromatics: In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onion and sliced celery. Cook, stirring frequently, until the vegetables are tender and translucent, about 5-7 minutes. Season with salt and pepper.
- Combine ingredients: In a large mixing bowl, place the cubed cornbread. Add the sautéed onions and celery along with the chopped apples. Toss gently to mix.
- Add broth: Slowly pour in 2 ¼ to 2 3/4 cups of chicken or vegetable broth, stirring carefully as you go. The mixture should be moist but not soggy; add broth gradually and adjust to desired consistency.
- Bake the stuffing: Transfer the mixture to a greased baking dish. Cover loosely with foil and bake in a preheated oven at 350°F (175°C) for about 25 minutes. Then remove the foil and bake for an additional 15 minutes until the top is lightly browned and crisp.
