Ingredients
Scale
Oatmeal Base
- 1 cup rolled oats
- 2 cups milk (or plant-based milk)
- 1/4 tsp ground cinnamon
- Pinch of salt
Custard Mixture
- 2 large eggs
- 1–2 tbsp maple syrup or honey (optional)
- 1/2 tsp vanilla extract
Optional Toppings
- Fresh fruit
- Nut butter
- Chopped nuts
- Yogurt
Instructions
- Prepare the Oats: In a medium saucepan over medium heat, combine the rolled oats, milk, ground cinnamon, and a pinch of salt. Bring the mixture to a gentle simmer, starting the base for the oatmeal.
- Cook the Oats: Allow the oats to cook for 4 to 5 minutes, stirring occasionally, until they start to soften and absorb the liquid, creating a creamy base.
- Whisk the Custard Mixture: In a small bowl, whisk together the eggs, vanilla extract, and maple syrup or honey if you choose to use it, preparing the custard component.
- Add Custard to Oatmeal: Reduce the heat to low. Slowly pour the egg mixture into the simmering oats while stirring constantly to prevent the eggs from scrambling and to blend the custard evenly.
- Thicken the Custard Oatmeal: Continue to cook on low for 2 to 3 minutes, stirring gently, until the oatmeal thickens and achieves a creamy, custard-like consistency.
- Serve: Remove the saucepan from the heat and let the oatmeal sit for 1 minute. Serve warm, topped with your choice of fresh fruit, nut butter, chopped nuts, or yogurt for extra flavor and texture.
Notes
- Use plant-based milk to make the dish vegan, but note that eggs are not vegan; substitute with a vegan egg replacer if necessary.
- Adjust the sweetness by varying the amount of maple syrup or honey or omit altogether for a less sweet version.
- Stirring constantly when adding the egg mixture is crucial to prevent curdling and achieve a smooth custard texture.
- This oatmeal is best served warm immediately but can be gently reheated with a splash of milk to restore creaminess.
