- Add Sugar and Dairy: Stir in the brown sugar, light corn syrup, sweetened condensed milk, and salt until all ingredients are fully combined.
- Cook the Caramel: Increase the heat and bring the mixture to a gentle boil. Reduce to medium-low heat, attach a candy thermometer, and cook while stirring continuously until the temperature reaches 245°F (118°C), indicating the firm ball stage.
- Add Vanilla: Remove the saucepan from heat and stir in the vanilla extract thoroughly.
- Pour and Cool: Pour the hot caramel mixture into the prepared pan and spread it evenly. Allow it to cool at room temperature for at least 2 hours to set completely.
- Cut Caramels: Once set, use the parchment paper edges to lift the caramel slab out of the pan. Cut into approximately 64 small squares using a sharp knife.
- Optional Sea Salt: Before the caramel is fully set, sprinkle sea salt on top to enhance the flavor with a salty-sweet contrast.
