Ingredients
Scale
Sweet Potatoes
- 2 pounds sweet potatoes, peeled and diced
Seasoning & Glaze
- 3 tablespoons olive oil
- 3 tablespoons honey
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Optional Garnish
- Fresh parsley, chopped
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure even roasting.
- Mix Ingredients: In a large bowl, combine the diced sweet potatoes with olive oil, honey, ground cinnamon, salt, and black pepper. Toss everything together thoroughly to coat the sweet potatoes evenly with the glaze and spices.
- Prepare for Roasting: Spread the coated sweet potatoes in a single layer on the prepared baking sheet for uniform cooking and caramelization.
- Roast Sweet Potatoes: Place the baking sheet in the preheated oven and roast for 25-30 minutes. Stir the sweet potatoes halfway through the cooking time to promote even browning and caramelization. The potatoes should be tender and nicely caramelized when done.
- Cool: Remove the roasted sweet potatoes from the oven and let them cool for a few minutes to allow the glaze to set and flavors to meld.
- Garnish and Serve: Optionally, sprinkle the roasted sweet potatoes with freshly chopped parsley before serving to add a fresh, vibrant touch.
Notes
- The honey adds sweetness but can be adjusted or replaced with maple syrup for a different flavor.
- Make sure to stir halfway through roasting for even caramelization and to prevent burning.
- Peeling the sweet potatoes is optional, depending on your texture preference.
- Use fresh parsley as garnish to add color and freshness, optionally you can substitute with cilantro or leave off garnish.
- For a spicier twist, add a pinch of cayenne pepper or smoked paprika.
