  • 1 small Scotch Bonnet Pepper, finely chopped (optional)
  • 1 teaspoon Thyme (Fresh or Dried)
  • 1 tablespoon Black Pepper, to taste
  • 1 tablespoon Vegetable Oil
  • 1 tablespoon Ketchup (optional)
  • 1/4 cup Water


Instructions

  1. Preheat the Skillet: Place a large skillet over medium heat and add the vegetable oil to warm.
  2. Sauté Vegetables: Add the sliced onions, bell peppers, and minced garlic to the skillet and cook for about 5 minutes until they become soft and fragrant.
  3. Add Seasonings: Stir in the thyme, black pepper, and finely chopped scotch bonnet pepper if using, mixing gently to combine all flavors.
  4. Incorporate Corned Beef: Add the canned corned beef to the skillet. Break it up with a fork or spoon and mix thoroughly with the sautéed vegetables and spices.
  5. Add Tomatoes and Simmer: Pour in the chopped tomatoes, splash the water, and add ketchup if desired. Let the mixture simmer for 5–7 minutes until it thickens slightly and the flavors meld together.
  6. Adjust Seasoning and Rest: Taste the dish and adjust the seasoning as needed. Remove the skillet from heat and let the mixture sit for a couple of minutes before serving.
