- 1 teaspoon Thyme (Fresh or Dried)
- 1 tablespoon Black Pepper, to taste
- 1 tablespoon Vegetable Oil
- 1 tablespoon Ketchup (optional)
- 1/4 cup Water

- Preheat the Skillet: Place a large skillet over medium heat and add the vegetable oil to warm.
- Sauté Vegetables: Add the sliced onions, bell peppers, and minced garlic to the skillet and cook for about 5 minutes until they become soft and fragrant.
- Add Seasonings: Stir in the thyme, black pepper, and finely chopped scotch bonnet pepper if using, mixing gently to combine all flavors.
- Incorporate Corned Beef: Add the canned corned beef to the skillet. Break it up with a fork or spoon and mix thoroughly with the sautéed vegetables and spices.
- Add Tomatoes and Simmer: Pour in the chopped tomatoes, splash the water, and add ketchup if desired. Let the mixture simmer for 5–7 minutes until it thickens slightly and the flavors meld together.
- Adjust Seasoning and Rest: Taste the dish and adjust the seasoning as needed. Remove the skillet from heat and let the mixture sit for a couple of minutes before serving.
- Serve: Spoon the Jamaican Bully Beef over white rice, stuff it into bread for a sandwich, or serve alongside fried dumplings for a traditional taste.
