Description

This elegant dish pairs tender, garlicky lamb chops with a luxurious lobster mashed potato base and perfectly cooked asparagus, creating a rich and sophisticated meal perfect for special occasions or a gourmet dinner at home.

Ingredients

Scale

Lamb Chops

  • 8 lamb chops
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped

Lobster Mash

  • 1 lb potatoes, peeled and cubed
  • 1 cup lobster meat, cooked and chopped
  • 1/2 cup milk
  • 4 tbsp butter
  • 1/4 cup grated Parmesan cheese

Vegetables

  • 1 bunch asparagus, trimmed

Instructions

  1. Prepare the potatoes: Place peeled and cubed potatoes in a large pot of salted water. Bring to a boil over medium-high heat and cook until potatoes are tender, about 15-20 minutes. Drain well.
  2. Mash the potatoes and lobster meat: In a large bowl, mash the cooked potatoes with butter, milk, and grated Parmesan cheese until smooth and creamy. Gently fold in the cooked and chopped lobster meat, blending just enough to combine.
  3. Season and marinate lamb chops: Pat the lamb chops dry, then season both sides with salt, pepper, minced garlic, and fresh rosemary. Let them marinate for about 5-10 minutes to absorb the flavors.
  4. Cook the lamb chops: Heat olive oil in a large skillet over medium-high heat. Add the lamb chops and cook for about 3-4 minutes per side for medium-rare, or adjust time according to your preferred doneness. Remove from heat and let rest for a few minutes.
  5. Prepare asparagus: While lamb cooks, steam or blanch the trimmed asparagus until tender-crisp, about 3-5 minutes. Season lightly with salt and a drizzle of olive oil if desired.
  6. Plate and serve: Spoon a generous portion of the lobster mashed potatoes onto each plate, place lamb chops on top or beside the mash, and arrange asparagus alongside. Serve immediately while warm.

Notes

  • For best results, use fresh rosemary and high-quality lamb chops.
  • Adjust milk quantity in mash for desired consistency.
  • You can roast asparagus in the oven as an alternative to steaming for added flavor.
  • Resting the lamb chops after cooking helps retain juices for a tender bite.
