Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the zucchini melts evenly.
  2. Prepare Zucchini: Slice the zucchinis lengthwise into approximately 1/4-inch thick slices. Brush both sides with olive oil and season with salt and pepper to enhance flavor and prevent sticking.
  3. Layer Ingredients: Lightly grease an 8×8 inch baking dish. Arrange half of the zucchini slices in a single layer. Evenly spread half of the ricotta cheese over the zucchini, then top with half of the marinara sauce and half of the shredded mozzarella cheese. Repeat these layers with the remaining zucchini, ricotta, marinara, and mozzarella.
  4. Season and Bake: Sprinkle dried oregano over the top layer to add an aromatic herb flavor. Bake the dish for 20-25 minutes, or until the zucchini is tender and the cheese is melted and bubbly, indicating it’s perfectly cooked.
