Description

Lazy Cake Cookies are a no-bake, easy-to-make dessert combining crushed chocolate wafer cookies with a rich chocolate mixture made from cocoa powder, sweetened condensed milk, melted butter, and vanilla. These treats set in the refrigerator, making them perfect for a quick, no-cook dessert that’s deliciously fudgy and ready in just a couple of hours.

Ingredients

Scale

Dry Ingredients

  • 1 package (14 oz) chocolate wafer cookies (or any plain cookies like graham crackers)
  • 1/2 cup unsweetened cocoa powder
  • Pinch of salt

Wet Ingredients

  • 1 can (14 oz) sweetened condensed milk
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Crush the cookies: Start by crushing the cookies into small pieces. You can do this by placing them in a large resealable bag and using a rolling pin or a food processor for finer crumbs. Set aside the crushed cookies.
  2. Prepare the wet ingredients: In a medium bowl, combine the cocoa powder, sweetened condensed milk, melted butter, vanilla extract, and a pinch of salt. Stir until the mixture is smooth and well combined.
  3. Mix the dry ingredients: Add the crushed cookies to the cocoa mixture and stir thoroughly to ensure all cookie pieces are coated evenly with the chocolate mixture. The mixture will be thick.
  4. Form the cookies: Scoop spoonfuls of the mixture and roll them into balls, or press the mixture evenly into a parchment-lined dish to form bars about 1-inch thick.
  5. Chill: Refrigerate the shaped cookies or bars for 1-2 hours, or until they are firm and set.
  6. Serve: Remove from the refrigerator. If you made bars, cut them into squares. Enjoy your fudgy, no-bake lazy cake cookies!

Notes

  • For a finer texture, pulse the cookies in a food processor instead of crushing by hand.
  • You can substitute chocolate wafer cookies with graham crackers or any plain cookies.
  • Store the cookies in an airtight container in the refrigerator for up to one week.
  • Add chopped nuts or dried fruits for variation.
  • These cookies do not require baking and are great for hot days or when you want a quick dessert.
