Filling
- 1 cup cooked and shredded chicken breast
- 1/2 cup diced red bell pepper
- 1/2 cup diced green bell pepper
- 1/4 cup diced red onion
- 1 tablespoon olive oil
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon paprika
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
Topping
- 1/2 cup shredded cheddar or Mexican blend cheese
- Optional toppings: sour cream, salsa, chopped cilantro
Instructions
- Preheat Oven and Prepare Wonton Cups: Preheat the oven to 375°F. Spray a 12-cup muffin tin with nonstick spray and gently press a wonton wrapper into each cup, folding as needed to fit.
- Bake Wonton Wrappers: Bake the wonton wrappers for 7–8 minutes until they are lightly golden and crisp, then remove from the oven.
- Sauté Vegetables: While the wrappers bake, heat olive oil in a skillet over medium heat. Add diced red and green bell peppers along with diced red onion and sauté for 3–4 minutes until just tender.
- Add Chicken and Spices: Stir in the cooked shredded chicken, chili powder, cumin, paprika, garlic powder, salt, and pepper. Cook for another 2–3 minutes, stirring frequently until the mixture is heated through and well coated with spices.
- Assemble and Top Wonton Cups: Spoon the chicken fajita mixture evenly into each baked wonton cup. Sprinkle shredded cheddar or Mexican blend cheese evenly over each cup.
- Bake Until Cheese Melts: Return the filled wonton cups to the oven and bake for another 5–6 minutes until the cheese is melted and bubbly.
- Serve: Serve the mini chicken fajita wonton cups warm with optional toppings such as sour cream, salsa, and chopped cilantro.
Notes
- You can make the chicken ahead of time or use rotisserie chicken for convenience.
