Broccoli Crust
- 2 cups broccoli florets
- 2 large eggs
- 1/2 cup grated mozzarella cheese (or dairy-free alternative)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt

- 1/2 cup marinara or pizza sauce
- Additional grated mozzarella cheese for topping, about 1/2 cup
- Olives, chopped bell peppers, tomatoes, or other desired toppings
Instructions
- Preheat the oven. Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper to prevent sticking and ensure easy cleanup.
- Cook the broccoli. Place the broccoli florets in a pot with 1 cup of water. Cover and simmer for 5 minutes until the broccoli is fork-tender. Drain well and let cool on a clean kitchen towel.
- Remove excess moisture. Use the kitchen towel to firmly pat the broccoli, squeezing out as much water as possible to avoid soggy crusts.
- Make the broccoli crust mixture. Transfer the broccoli to a food processor. Add the eggs, 1/2 cup mozzarella, garlic powder, and salt. Pulse several times until the mixture is smooth and well combined. Scrape down the sides as needed and pulse again.
- Form mini crusts. Spoon about 1 tablespoon of the broccoli mixture onto the prepared baking sheets. Flatten each scoop into a round mini pizza crust. Use a cookie cutter for uniform shapes if preferred. Repeat with the remaining mixture.
- Bake the crusts. Bake the broccoli crusts for 15-20 minutes until they turn golden brown and start to firm up.
- Add toppings and bake again. Spread a thin layer of marinara sauce on each crust. Sprinkle mozzarella cheese and add your desired veggie toppings. Return the pizzas to the oven and bake for an additional 3-5 minutes until the cheese is melted and bubbly.
