  • 1 teaspoon Italian seasoning
  • ¼ teaspoon sea salt
  • ¼ teaspoon pepper
  • ½ cup canned full-fat coconut milk or heavy cream
  • ½ cup freshly grated parmesan
  • 5 oz baby spinach

Instructions

  1. Prepare Aromatics: Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, cooking for about 5 minutes while stirring frequently until the onions are soft and translucent.
  2. Cook Sausage: Add the chicken sausage chunks to the pan and sauté for 5-6 minutes until they are golden brown on the outside and cooked through.
  3. Toast Orzo and Add Liquids: Stir in the dry orzo and cook for about 1 minute to toast it slightly. Then pour in chicken broth, coconut milk, sea salt, pepper, and Italian seasoning. Bring the mixture to a boil, cover the skillet, and reduce heat to a simmer. Cook for 10-12 minutes until the orzo is tender and has absorbed most of the liquid.
  4. Finish with Spinach and Parmesan: Stir in the baby spinach and grated Parmesan cheese. Cook for an additional 1-2 minutes until the spinach wilts and the cheese melts into the creamy orzo mixture.
  5. Serve: Plate the dish and optionally top with extra Parmesan, fresh basil leaves, and crushed red pepper flakes for a little heat.
