Instructions
- Melt the milk chocolate and butter: In a large heatproof bowl set over simmering water, gently melt the milk chocolate and unsalted butter together until smooth and glossy, stirring occasionally to combine.
- Add mini marshmallows: Remove the bowl from the heat and immediately add the mini marshmallows, stirring quickly to coat them in the melted chocolate mixture until mostly melted and well combined.
- Mix in the Rice Krispies: Fold in the Rice Krispies (or Coco Pops) until the cereal is evenly coated with the marshmallow chocolate mixture, creating a sticky, gooey mixture.
- Shape the puddings: While the mixture is still warm but cool enough to handle, use your hands to roll the mixture into small, round pudding-shaped balls. Place them on a baking sheet lined with parchment paper to set.
- Melt white chocolate for topping: Melt the white chocolate in a similar manner to the milk chocolate until smooth. Use a spoon to drizzle or spoon the white chocolate over the tops of the Rice Krispie puddings to resemble the traditional white icing of Christmas puddings. Allow to set slightly.
- Prepare the sugarpaste decorations: Divide the white sugarpaste into two portions.
