Instructions

  1. Prepare the filling: In a large bowl, combine the shredded green cabbage, shredded carrots, chopped cooked vermicelli noodles, chopped mushrooms, thinly sliced green onions, minced garlic, soy sauce, sesame oil, and grated ginger. Mix thoroughly until all ingredients are evenly coated and well combined.
  2. Soften the rice paper wrappers: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 5 seconds until it is just softened but still pliable. Lay the softened wrapper carefully on a clean, flat surface.
  3. Assemble the dumplings: Place about 2 tablespoons of the prepared filling near the bottom edge of the rice paper wrapper. Fold in the sides over the filling, then roll the wrapper tightly upward like a burrito to encase the filling securely. Repeat this process with the remaining wrappers and filling.
  4. Pan-fry the dumplings: Heat 1 tablespoon of vegetable oil in a nonstick skillet over medium heat. When the oil is hot, carefully place the dumplings seam-side down in the skillet to prevent unrolling. Cook for 2 to 3 minutes on each side until the dumplings turn golden brown and crisp. Transfer cooked dumplings to a plate lined with paper towels to drain excess oil.
