- 1 can Spam (cut into small cubes)
- 3 large eggs (beaten)

- 1 tablespoon oyster sauce (optional)
- 2 cloves garlic (minced)

Instructions
- Prepare the Rice and Spam: Spread freshly cooked rice on a tray to cool. Heat a skillet or wok over medium-high heat, add vegetable oil, and fry Spam cubes until crispy, about 3 to 5 minutes. Remove from skillet and set aside.
- Scramble the Eggs: In the same skillet, pour in the beaten eggs and scramble until just cooked through. Remove and set aside with the fried Spam.
- Stir-Fry the Garlic and Rice: If needed, add a touch more oil, then sauté minced garlic for about 30 seconds until fragrant. Add the cooked rice and stir-fry for 2 to 3 minutes, breaking up any clumps for even heat distribution.
- Add Seasonings and Greens: Drizzle soy sauce and optional oyster sauce over the rice, stirring well to combine. Toss in leafy greens and stir-fry until they are slightly wilted but still vibrant.
- Combine Everything: Return the previously cooked Spam and scrambled eggs to the skillet. Gently toss all the ingredients together and heat through for about one more minute.
- Serve: Transfer the fried rice to serving bowls and garnish with chopped green onions and additional soy sauce if desired. Serve hot.
