- 2 cups fresh pineapple, finely chopped
- 1–2 jalapeños, seeded and finely chopped
- 1 small red onion, finely diced
- 2 tablespoons fresh ginger, minced
- 2 garlic cloves, minced
- 1/2 cup apple cider vinegar
- 1/4 cup brown sugar
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- 1 tablespoon olive oil
Instructions
- Sauté Aromatics: Heat the olive oil in a medium saucepan over medium heat. Add the finely diced red onion and sauté for 2–3 minutes until softened and translucent, allowing the flavors to develop.
- Add Ginger and Garlic: Stir in the minced ginger and garlic, cooking for an additional minute to release their fragrant aromas without burning.
- Combine Pineapple and Jalapeños: Add the chopped pineapple and seeded, finely chopped jalapeños to the pan, mixing well to combine all ingredients evenly.
- Add Liquids and Spices: Pour in the apple cider vinegar and stir in the brown sugar, ground cinnamon, ground cloves, and salt, ensuring that the sugar dissolves and the spices blend smoothly.
- Simmer the Chutney: Bring the mixture to a rolling boil, then reduce the heat to low and let it simmer uncovered for 25–30 minutes. Stir occasionally to prevent sticking, cooking until the chutney thickens to a jam-like consistency.
- Cool and Store: Remove the saucepan from heat and let the chutney cool to room temperature. Transfer it into a clean jar and refrigerate to allow the flavors to meld and preserve freshness.
