Instructions

  1. Sauté Aromatics: Heat the olive oil in a medium saucepan over medium heat. Add the finely diced red onion and sauté for 2–3 minutes until softened and translucent, allowing the flavors to develop.
  2. Add Ginger and Garlic: Stir in the minced ginger and garlic, cooking for an additional minute to release their fragrant aromas without burning.
  3. Combine Pineapple and Jalapeños: Add the chopped pineapple and seeded, finely chopped jalapeños to the pan, mixing well to combine all ingredients evenly.
  4. Add Liquids and Spices: Pour in the apple cider vinegar and stir in the brown sugar, ground cinnamon, ground cloves, and salt, ensuring that the sugar dissolves and the spices blend smoothly.
  5. Simmer the Chutney: Bring the mixture to a rolling boil, then reduce the heat to low and let it simmer uncovered for 25–30 minutes. Stir occasionally to prevent sticking, cooking until the chutney thickens to a jam-like consistency.
