- 3 cloves garlic, minced
- 2 tsp ginger, minced
- 1-2 red chilies, finely chopped (plus more for garnish)
- 4 spring onions, cut into 2 cm pieces (plus more for garnish)
Sauce
- 6 tbsp lime juice
- 6 tbsp dark soy sauce
- 6 tbsp sugar

- 2 tbsp vegetable oil
- Chili flakes, chopped chilies, and extra spring onions for garnish
Instructions
- Prepare the beef: In a bowl, toss the thinly sliced sirloin steak with cornstarch, salt, and black pepper until each piece is evenly coated. Set this mixture aside for a few minutes to allow the coating to adhere to the beef.
- Cook the beef: Heat 2 tablespoons of vegetable oil in a wok or large skillet over high heat. Add the beef slices and stir-fry for 3 to 4 minutes until browned and cooked through. Remove the beef from the pan and set aside to prevent overcooking.
- Stir-fry the vegetables and aromatics: In the same pan, add the sliced red bell pepper, broccoli florets, minced garlic, and minced ginger. Stir-fry these together for 2 to 3 minutes until the vegetables become tender-crisp but still vibrant and fresh.
- Prepare the sauce: In a small bowl, mix together lime juice, dark soy sauce, sugar, and finely chopped red chilies. Pour this sauce mixture into the pan with the vegetables and simmer for 2 to 3 minutes, allowing the sauce to slightly thicken and coat the vegetables nicely.
- Cook the noodles: Meanwhile, cook the egg noodles according to the package instructions. Once cooked, drain the noodles thoroughly to remove excess water.
- Combine beef, noodles, and spring onions: Return the cooked beef back into the pan with the simmered vegetables and sauce. Add the cooked egg noodles and cut spring onions. Toss everything together thoroughly over medium heat until all ingredients are well combined and heated through.
- Serve and garnish: Transfer the sticky beef noodles to serving plates. Garnish generously with chili flakes, extra chopped red chilies, and additional spring onions to add extra color and heat to the dish. Serve immediately for best flavor.
