These brownies offer a unique twist on a classic treat, topped with a smooth strawberry-infused glaze for an irresistible dessert perfect for any occasion.

Ingredients

Scale

Brownie Batter

  • 3/4 cup (168 g) unsalted butter, chopped into small cubes
  • 8 oz (226 g) high-quality white chocolate bars, chopped (Lindt or Ghirardelli bars)
  • 2 eggs
  • 2 egg yolks
  • 1 1/4 cups (250 g) granulated white sugar
  • 1 tbsp (15 ml) vanilla extract
  • 1 3/4 cups (219 g) all-purpose flour, spooned and leveled
  • 3/4 tsp salt
  • 2 1/2 cups (50 g) freeze-dried strawberries

Strawberry Glaze

  • 2 cups (270 g) powdered sugar
  • 2-3 tbsp (30-45 ml) whole milk
  • 1/4 cup (5 g) freeze-dried strawberries

Instructions

  1. Prepare the Brownie Batter: In a heatproof bowl, melt the unsalted butter and chopped white chocolate together over a double boiler or in short bursts in the microwave, stirring until smooth. Allow to cool slightly.
  2. Mix Eggs and Sugar: In a separate large bowl, whisk the eggs, egg yolks, granulated sugar, and vanilla extract until pale and slightly thickened, about 3-4 minutes.
  3. Combine Ingredients: Gradually pour the melted butter and white chocolate mixture into the egg mixture, stirring continuously to combine evenly.
  4. Add Dry Ingredients: Sift the all-purpose flour and salt together, then fold into the wet ingredients gently, ensuring no lumps remain. Stir in the freeze-dried strawberries until distributed evenly.
  5. Bake the Brownies: Preheat your oven to 325°F (163°C). Line a 9×13 inch baking pan with parchment paper or grease it lightly. Pour the batter into the prepared pan, spreading it evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
  6. Cool Before Glazing: Remove the brownies from the oven and let cool completely in the pan on a wire rack. This prevents the glaze from melting when applied.
  7. Prepare the Strawberry Glaze: Crush the freeze-dried strawberries into a fine powder using a food processor or mortar and pestle. In a bowl, whisk the powdered sugar with 2 tablespoons of whole milk, adding more milk if needed to reach a smooth, pourable consistency. Stir in the strawberry powder until fully combined.
  8. Apply the Glaze: Pour or spread the strawberry glaze evenly over the cooled brownies. Allow the glaze to set at room temperature for about 30 minutes before slicing.
  9. Serve: Cut the brownies into 16 squares. Enjoy these delicious strawberry-infused treats with a glass of milk or your favorite beverage.

Notes

  • For best results, use high-quality white chocolate bars for a richer flavor.
  • Make sure the brownies are completely cooled before adding the glaze to prevent melting.
  • Freeze-dried strawberries can be found in specialty stores or online.
  • Store brownies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • To make the glaze dairy-free, substitute whole milk with almond or oat milk.
