Ingredients
Scale
Beef Filling
- 1 pound ground beef
- 1 packet taco seasoning mix
- 2/3 cup water
Cheese & Veggies
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup diced tomatoes
- 1/4 cup finely chopped white onion
Wrap & Cooking
- 6 medium flour tortillas
- Nonstick spray or a bit of butter for warming
Instructions
- Cook the Ground Beef: In a skillet over medium heat, cook the ground beef until browned, breaking it up with a spatula as it cooks. Drain any excess grease to avoid greasiness.
- Season and Simmer: Add the taco seasoning mix and water to the cooked beef, stir well to combine, then simmer for 5 to 7 minutes until the mixture thickens and flavors meld together.
- Prepare the Cheese Blend: While the beef simmers, mix together the shredded cheddar and Monterey Jack cheeses in a bowl. This blend provides a creamy, melty texture and rich flavor.
- Warm the Tortillas: Heat the tortillas in a dry skillet or microwave just until they become soft and pliable, making them easier to roll without cracking.
- Assemble the Meximelts: Place a generous scoop of the seasoned beef in the center of each tortilla. Sprinkle with the cheese blend, then add the diced tomatoes and chopped onion evenly on top.
- Fold the Wraps: Fold in the sides of the tortillas and roll tightly like a burrito to encase the filling, ensuring none falls out during warming.
- Final Warm and Melt: Lightly warm each wrapped Meximelt in a skillet over medium heat or in the microwave for 20 to 30 seconds until the cheese inside melts completely. Serve hot for the best experience.
Notes
- Add a spoonful of sour cream or mild salsa inside the wrap before folding for extra creaminess and flavor.
- Use store-bought or homemade taco seasoning depending on your preference and to control the spice levels.
- For a crispier exterior, toast the wrapped Meximelts lightly in a skillet before serving.
